摘要
鱼豆腐产品尚无国家标准、行业标准,"浙江制造"团体标准《即食深海鳕鱼鱼糜制品鱼豆腐》的制定填补了该产品标准的空白。本文介绍其标准的研制理念、主要技术内容及确定依据。通过对相关国内外标准对比分析,阐述该标准在原材料选择、投料要求、工艺与装备、品质指标、安全指标等方面的先进性。该标准的实施推广,对整个鱼糜制品行业的质量升级起到积极的指导和促进作用。
As an association standard of Zhejiang Made,Instant deep sea cod surimi products Fish tofu has filled the blank since there are no national and industry standards on fish tofu product.This paper introduces the development concept,main technical content and determination basis of this standard.By comparing with domestic and foreign standards,it illustrates the advanced concept of the standard in many aspects,such as the selection of raw materials,the requirements of materials,process and equipment,quality index and safety index.The standard will have positive guidance and promotion effect for the quality improvement of surimi products industry.
