摘要
唐代扬州是全国重要的工商业城市和经济中心 ,地处长江、淮河、运河之交汇点上 ,是水上交通枢纽 ,同时也是重要的对外贸易港口和对外交往的窗口城市。城市经济繁荣 ,人口众多 ,城市服务业发达 ,其中餐饮业十分繁荣。由于中外之间的广泛交流 ,扬州形成了以南菜为主兼具浓郁特色风情的菜肴和小吃。扬州餐饮业的繁荣除了自身的优势条件外 ,更得益于南北饮食文化和饮食风俗的相互影响与融合 。
Yangzhou was an important industrial and commercial city, so was the centre of economic all over the country in T'ang dynasty. Lying on thejoint of the Yangte River, Huai River and the Grand Canal, was a hub of water traffic, an important port for foreign trade and a window city for exchanging goods. The city, of a large population and with prosperous economic, had thriving service industry, especially the restaurant industy of. Due to the broad communication between Yang Zhou and outside world, the antient city formed some particular cooked food and typical local dish with distinctive strong features. The flourishing restaurant industry of Yang Zhou was build not only on the basis of its own advantages, but also influenced and merged each other mainly on the dietary culture and customs, whole areas of north and south. In the meanwhile, consumer requirement of a massive townspeople stratum was anther vital element, which supported a flourishing restaurant industry of Yang Zhou.
