摘要
本文研究了富硒啤酒酵母的自溶条件,并利用酶制剂改进其自溶条件,确定了富硒啤酒酵母的最适水解条件。采用食盐作自溶促进剂,最适添加量为3%,自溶最适加水量为250%,最适温度为50 ℃,pH值为6.5。采用蛋白酶可以促进自溶过程,最适添加量为0.03%,可将自溶时间由48 h减少到24 h,并提高氨基氮的含量。
This paper antolyse condition of selenium-enriched brewers yeast, and the technique of antolyse of selenium-enriched brewers yeasts was improved by adding enzyme. Finally the best antolyse condition of selenium-enriched brewers yeast was obtained.
