摘要
玉米蛋白粉是用玉米生产淀粉的副产物,含有丰富的玉米黄色素和玉米醇溶蛋白资源。玉米黄色素是一种油溶性的天然色素,可广泛用于人造奶油、糖果、面条、冷饮和烘焙制品等食品中,同时还具有重要的生理活性功能和较强的抗氧化活性。本文研究了从玉米蛋白粉中提取玉米黄色素的工艺。通过比较不同提取溶剂的提取效果,并结合玉米醇溶蛋白的得率加以考察,确定了无水乙醇为玉米黄色素提取的最适溶剂,所得玉米黄色素的得率及纯度均较高,且在提取时不会造成玉米醇溶蛋白的损失,有利于玉米蛋白粉的综合开发利用。正交试验表明提取温度对提取玉米黄色素的影响较大,其次为料液比,而提取时间的影响最小,最适提取条件为提取温度80℃,提取时间3h,料液比1:12。
