摘要
以云南普洱生茶为原料,筛选出一株霉菌进行固体发酵,研究了普洱生茶发酵前后茶褐素含量的变化。结果表明,普洱生茶发酵8d后茶褐素达到13%左右,优化发酵条件后茶褐素最高可达24%,较未发酵普洱生茶提高了8.23倍。采用有机溶剂萃取法从发酵后普洱生茶中提取茶褐素,以茶褐素含量为指标,对提取工艺条件进行优化,结果显示,样品得率约为10%,其中茶褐素质量分数为826.4mg/g。抗氧化活性检测表明,该茶褐素样品具有很强的抗氧化活性。
The change of theabrowmins in pu′er tea before and after solid fermentation was studied.The results showed that the theabrowmins content is about 13% after 8-day fermentation and the highest yield of 24% can be obtained through optimizing the fermentation conditions,which is 8.23 times raised compared with unfermented pu′er tea.The theabrowmins were prepared by organic solvent extraction from fermented pu′er tea.With the yield of theabrowmins as index,the extraction conditions were optimized.The yield is about 10% of the sample and the theabrowmins content is 826.4 mg/g in the sample.Antioxidant activity of the sample indicated that the sample has strong antioxidant activity.
