摘要
分析了衡量鸡蛋新鲜度的指标与贮藏时间的相关关系,在实验条件下,贮藏18d的鸡蛋重量下降4g, 蛋黄指数降为0.1以下,可以作为鸡蛋不新鲜的指标。蛋重、蛋黄指数均与贮藏时间呈显著负相关关系。
Research on the correlativity of the storing conditions and freshness of eggs is necessary for the nondestructive detection of the internal quality of eggs. At the same time, it is significant for the storage .circulation and processing of chicken eggs. This paper deals with the correlativity between the freshness indexes and storing conditions.
