有机无机N不同配比与中粳稻稻米品质关系的研究 被引量:8

摘要 以优质中粳稻“通育粳1号”为材料,研究了施N量225kg·hm-2水平下,有机无机N不同配比与稻米品质间关系。结果表明,有机无机N不同配比主要影响稻米的外观品质、蒸煮品质和蛋白质含量。随着有机氮占比增加,垩白率增高,呈y=7.8857x2+0.3143x+28.546(R2=0.8916)关系,垩白度先增后又降,呈y=-13.9048x2+13.5181x+3.9486(R2=0.8271)关系,直链淀粉含量略有增加,蛋白质含量显著下降,呈y=-1.672x+7.602(R2=0.9986)关系,稻米淀粉谱特征值无明显变化,糊化温度有下降趋势。食味品质随着有机氮占比增加而改善。 Mid-season rice with high quality “Tong yujing 1”was used as ma te rial to study relation between different ratio of organic nitrogen and mineral n itrogen and rice quality in nitrogen level of 225 kg·hm-2. The results showed that different ratio of organic nitrogen and mineral nitrogen mainly influenced the external appearance quality and cooking quality and protein content of rice Along with ratio of organic nitrogen increasing, Chalky percentage increased. Th ere was relation “y=7.8857x2+0.3143x+28.546 (R2=0.8916)”. Chalkiness decline d after increasing first. There was relation “y=-13.9048x2+13.5181x+3.9486 ( R2=0.8271)”. Amylose content slightly increased and protein content significant ly descended. There was relation “y=-1.672x+7.602 (R2=0.9986)”.The rice sta rch profile characteristic value had no obvious variety and pasting temperature contained the trend of descent. Eating quality was improved with increase of rat io of organic nitrogen.
