摘要 研究了迎春花黄色素的最佳提取工艺及性质。最佳提取工艺是:用体积分数为0.95的乙醇为萃取剂,每克晾干的迎春花用50mL提取剂在室温下浸泡4h,经过抽滤、浓缩,得到天然的黄色素胶质。迎春花黄色素在室温下稳定,6<pH<8时溶液呈亮黄色;该色素对氧化剂、防腐剂稳定,蔗糖对该色素具有增色和护色作用;金属离子K+,Na+,Ca2+,Mg2+对该色素稳定,Cu2+对其有增色作用,Pb2+使该色素退色。 The quality and optimum extraction technology of winter jasmine's yellow pigment were studied.The optimum extraction technology is as follows: To extract yellow pigment through dipping, pumping and condensing the dry winter jasmine in the extractant 50 mL per g for 4 hours with 0.95 ethanol as extractant at room temperature.The pigment was stable at room temperature.Its solution color was bright yellow at 6<pH<8.The pigment was stable to oxidizer and preservative.Cane sugar had the effects of color improving and color retention.The pigment was stable to metal ions K^+,Na^+,Ca^(2+),Mg^(2+),the Cu^(2+) had the effects of color retention,and Pb^(2+) faded the color of the pigment.
