摘要
对山药的蛋白质、淀粉酶、脂肪、多糖、维生素、氨基酸和微量元素等生化成分进行了测定 ,结果表明含有丰富的蛋白质、淀粉和 18种氨基酸 ,包括人体必需的 8种氨基酸 ,还含丰富的微量元素和多糖 .
The nutrients, such as protein, amylase, fat, amylose, vitamin, amino acid and trace element in Chinese yam ,is analyzed and the results show it contains abundant content of protein, amylase, amylose, trace element and 18 kinds of amino acids of which 8 types are essential to man.
