摘要
对山药新品种桂淮 2号叶芽营养及加工食用性进行研究 ,结果表明 :桂淮 2号叶芽蛋白质含量2 .82 % ,低于豌豆苗而高于其他多种芽苗菜 ;膳食纤维在同类蔬菜中含量最高 ,达 4 .4 6 % ;经小鼠MTD毒性试验属无毒级 ;作蔬菜食用 ,色、香、味俱佳 ,口感爽脆嫩滑 。
Nutrition and edibleness of leaf and shoot of new yam variety Guihuai No.2 were studied. Results showed that the protein content of leaf and shoot was 2.82 %, lower than pea shoot and higher than other vegetable seedlings; meal fibre was 4.46 %,which was the highest among the same type vegetable seedlings; the contents of heavy metal and organophosphorus pesticide were far lower than the standard;the MTD toxicity test with the mouse showed to be at the nontoxic level.
