摘要
介绍了多元化的稻米产品,如蒸谷米、胚芽米、营养强化米、发芽糙米、降血糖大米等;稻米的精深加工产品,如大米淀粉、大米蛋白、方便米、速食糙米及糙米粉等;大米制品。对米糠和稻壳等稻米加工副产品的综合利用进行了综述。
This paper introduces the multiple products of rice such as parboiled rice, germinated rice, enriched rice, germinated brown rice and blood-sugar-reducing rice etc; the rice refining products such as rice starch, rice protein, instant rice, instant brown rice, brown rice flour and so on; and rice preparations as well. It also reviews the comprehensive utilization of such rice by-products as rice bran and husks etc.
