摘要
研究了石榴皮黄色素的提取条件及其稳定性。
Pomegranate skin contains natural yellow pigment. The extraction of the pigment from Pomegranate skin and the effects of pH value, sunlight, ultraviolet-ray, temperature, oxidizers, reductants, metallic ions, organic acids and carbonhydrates on stability of the yellow pigment were studied.
