生料糖化曲的制作 被引量:6

摘要 随着工业的发展,世界上现有能源日益枯竭。因此开辟新能源和减少能源消耗,已成为各国科研上的重要课题。在酿造行业,节约能源以生料发酵的科研项目,应运而生,并成为科研上的热门。 目前,在生料制醋工艺上应用的菌种,属于糖化熟淀粉原料的菌种,而不是糖化生料淀粉的优良菌种,因而醋得率低。笔者在1980年搞生料制酒科研项目时,重点从选育糖化生淀粉能力强,破坏生料组织结构能力强的优良菌种着手,经过三年多的努力。
