摘要
对含双歧杆菌碳酸发酵乳饮料生产工艺的研究表明,采用嗜热链球菌和双歧杆菌单菌培养制备生产发酵剂,混菌发酵工艺是可行的。发酵乳中的双歧杆菌活菌数达到10~9cfu·mL^(-1)。最佳发酵条件为:双歧杆菌:嗜热链球菌=2:1,接种量6%,生长促进剂0.1%。发酵终点为 pH≤4.7,OD≥4.3,发酵时间为3~4 h。产品在4~5℃贮藏一周后,双歧杆菌活菌数在10~5 cfu·mL^(-1)。
The main purpose of this experiment was to study the technology of producing carbonated fermented milk beverage with Bifidus longum.The results indicated that technology of the single strain making bulk starter and incubating with mixed cultures was feasible.The viable cell counts of B.longum in the fermented skim milk can be reached the level of 10~9 cfu·mL^(-1).The optimum technological para- ments of incubation were:B.longum:Streptococcus thermophilus=2:1,inoculation rate 6%,the growth promoting adjunct(GPA)0.1%,the ending point of the incubation was pH≤4.7,OD≥4.3 and the time of incubation was 3 to 4 hours.After one week storage at 4~5℃.the Vcc of B.longum in the product was above 10~5 cfu·mL^(-1).
