摘要
颜色、硬度和糖度是水果质量无损检测的重要指标。采用 CIEL AB表色系统对鸭梨果面的上部和中部进行了色彩、硬度和糖度的测定 ,并分析了鸭梨黑心病与鸭梨果面颜色、糖度和硬度的差异关系。实验表明 ,各质量等级的鸭梨果面颜色的 L* 、E*ab指标均呈显著差异 ,其中中部的 L* 、E*ab呈极显著差异 ,病果和正常果之间的糖度有显著性差异 ,各等级之间的硬度值无显著差异 ,但是同一等级 (3级或 4级 )
Color, hardness and sugar content are critical parameters in nondestructive dete ction of fruits. The variability of color in upside and middle parts of pear was measured using CIELAB color variables, and the hardness and sugar content of pe ars were also tested. Remarkable differences ( P <0.000 1) were found among the colors in middle peel of different grades pears for L* and E* a b , and also ( P <0.05) between pears with internal browning and sound pe ars for sugar content. However, the same phenomenon was not found in hardness. F or the same grade (the third or the forth) pear, there was remarkable ( P <0 .05) difference between the hardness at upside and middle parts.
