摘要
该文介绍了化学、生化、超声波、机械研磨、匀浆机破碎及纳米级微生物细胞破碎机破碎等酵母细胞破碎技术,通过试验数据和推论说明各种破碎方法的优缺点,得出纳米级微生物细胞破碎机是理想的酵母细胞破碎工具,并将此细胞破碎机的应用原理和结构作了简单交待。
The technology of yeast cell disruption have important significance on the production of soy sauce and beer, and the chemical, biochemical, ultrasonic, grinding, homogenizing and nanometer grade microorganism cell crushing methods were introduced in this paper. The experiment data showed the advantages and disadvantages of each method and concluded that the nanometer grade microorganism cell crusher was the perfect yeast cell pulverizing instrument. The application principle and framework of the cell crusher were also simply introduced.
