摘要
以35周龄固始鸡所产蛋为素材,研究了其5个品变种的蛋质特性,结果表明:(1)各品变种均保留了固始鸡原有的蛋壳坚厚(54.67~58.60μm),蛋黄鲜红色(8.56~9.17),蛋黄胆固醇含量低(221.11~233.94mg/枚)等优良蛋质特征;同时也存在蛋重(48.13~50.51g)和蛋形指数(1.21~1.30)偏低的缺点;(2)蛋质各性状的相关性在不同品变种表现存在差异,如胆固醇与蛋重(黄乌和花羽鸡,r=0.79878~0.80938)(P<0.05)和蛋清粗蛋白含量(花羽鸡,r=0.88288)(P<0.01)呈强的正相关,而与蛋壳重(白乌鸡,r=-0.98537)和蛋黄粗蛋白含量(黄乌鸡,r=-0.9225)呈强的负相关(P<0.01).
The eggs of 35-week-age Gushi chicken were selected to investigate the egg quality traits of 5 different varieties. The results showed that:(1)The excellent egg quality traits of hardness and eggshell thickness(54.67~58.60μm), florid yolk (8.56~9.17) and low content of yolk cholesterol (221.11~233.94mg/egg) remained in every variety; but there were some drawbacks, such as low egg weight(48.13~50.51g)and egg shape index(1.21~1.30)in some varieties.(2)The result of correlation analysis of every egg trait showed that it had difference in different varieties, such as cholesterol:between cholesterol and egg weight there was significantly positive correlation (p<0.05) (r=0.79878~0.80938)both in Yellow feather Gushi Chicken with black skin and piebald feather Gushi Chicken, and between cholesterol and content of egg white crude protein the correlation was significantly positive (p<0.01)(r=0.88288)in piebald feather Gushi Chicken; meanwhile,there was negative significantly correlation (p<0.01) between cholesterol and weight of egg shell (white feather Gushi Chicken with white skin, r= -0.98537)and cholesterol and yolk crude protein(yellow feather Gushi Chicken with black skin, r= -0.9225).
