摘要
目的:探讨用超声波技术从玉米蛋白粉中提取高纯度、高收率的醇溶蛋白的工艺路线。方法:采用正交试验的方法进行优选,用凯氏定氮法测定醇溶蛋白的含量。结果与结论:最佳工艺条件为提取温度为60℃,超声时间为1h,乙醇体积分数为70%,pH值为9。本工艺路线制备醇溶蛋白的收率可达27.94%,纯度达94.68%,是一条经济可行的工艺路线。
Aim: To explore a technological route on how to prepare zein from corn gluten meal in ultrasonic extraction. Methods: The optimun experimental condition was obtained by orthogonal design, Kash measure nitrogen apparatus was used to determine the content of zein, Results and Conclusion: The optimum temperature was 60℃ , ultrasonic time, 1 h, the content of ethanol, 70% ,and pH ,9. The new process of preparing zein was economic and the yield of product was 27.94%.
