纯度在90%以上的分子蒸馏单甘酯多作为食品乳化剂有着广泛用途。本文综述了分子蒸馏单甘酯的质量要求、特性、生产流程、原理以及发展前景和方向。
Distilled monoglycerides which contain more than 90% monoglycerides are widely used as emulsifier in the foodstuff and other industries. An overview of distilled monoglycerides is presented, included the quantity standards, characteristics, manufacture and principle. In the last, point out the developing direction of distilled monoglycerides.
