摘要
本文以葡萄的枝、茎、叶、果及果园土壤为材料,从中分离出6株产香酵母菌种为研究对象,在低温15℃条件下,用这6株菌株进行发酵,通过对发酵产品的各种性能参数的测定,挑选出较优菌株,最后确定较优菌株生长的最适温度和最适pH。
Six kinds of yeast strains were scparated from grape twings, stalks, leaves, fruits and four kinds of soils of grape plantation, then using the six kinds of yeast strains to ferment grape juice and pick out the best strain by some parameters of the product, At last , the best temperature and pH for the best yeast strains to grow were confirmed.
