摘要
采用Folin-Ciocalte法测定了香蕉皮中多酚的含量,探讨了提取温度、提取时间、液料比、溶剂种类及其浓度对香蕉皮中多酚提取效果的影响,运用正交试验对香蕉多酚的提取条件进行了优化。结果显示,香蕉皮中多酚的含量为1.02 g/100g干重;单一溶剂体系中,4种溶剂的多酚提取效率高低依次为水、甲醇、丙酮和乙醇,而在该3种有机溶剂与水的复合溶剂体系中,以40%丙酮作为溶剂时,香蕉多酚的提取率最高;提取温度和液料比对多酚的提取效果存在显著的影响;香蕉皮中多酚的适宜提取条件为加入其重量8倍的40%丙酮溶液的香蕉皮于55℃下提取60 min。
Polyphenol content in dried banana peel was determined by Folin-Ciocalte colorimetry. The effects of extraction temperature, extraction time, ratio of solvent to raw material, solvent and its concentrations on the extraction of polyphenols from banana peel were studied. The extraction conditions were optimized by orthogonal experiment. Polyphenol content in dried banana peel was measured as 1.02 g/100 g. In simple solvent system, the solvent water has the highest extraction efficiency followed by methanol, acetone and ethanol. However, in the combination system of water with organic solvent, 40% acetone is the best solution for polyphenol extraction from banana peel. Both extraction temperatures and ratios of solvent to raw material had a significant influence on polyphenol extraction. The optimum extraction condition of banana polyphenols was that banana peel powder added with acetone-water (4:6, v/v) solution 8 times as many as its weight was kept at 55℃ for 60 minutes.
