摘要
对葡萄籽提取物原花色素受紫外辐射后的含量、3种主要化合物及清除DPPH自由基活性的变化进行了研究。结果表明,经5d的紫外照射,原花色素的含量明显下降(P<0.01),3种主要化合物儿茶素或表儿茶素的聚合体(二聚体)、表儿茶素、儿茶素依次消失,然而其DPPH清除率与对照样品相差不大(P>0.05),据进一步研究,紫外照射后,原花色素可能发生了聚合并生成花色素等有色物质,具体生成物及活性仍有待深入研究。
The contents, scavenging DPPH activity and variations of the main kinds of components of proanthocyanidins from grape seeds after UV irradiation were investigated. During the 5-day irradiation, the contents of proanthocyanidins decreased significantly(p〈 0.01), and the three main kinds of components --the dimmer , epicatechin and catechin --were vanished in turn. However, the ratios of scavenging DPPH were not obviously different from the controls(p 〉 0.05). Further research showed, after the UV irradiation the proanthocyanidins were probably polymerized and produced pigment such as anthocyanins, which will be investigated deeply in the future.
