摘要
葡萄糖淀粉酶是一种重要的工业酶制剂,属于糖苷水解酶,它将淀粉及类似物水解成β-葡萄糖。近年来,对葡萄糖淀粉酶的研究在酶学性质、结构组成、结构-功能关系等方面取得了长足的进展。本文对这些研究进展进行总结,并针对工业生产中的问题提出相应的解决途径。
Glucoamylase is a kind of glycoside hydrolase. Due to the ability of hydrolyzing starch or the similarity of starch into β-glucose, it plays an important role in industrial production. A great effort has been made until now on the research such as enzymatic property, structure, structure-function relationship and so on. This paper focused a brief review on advancing about these aspects, and put forward several approaches corresponding to problems in industrial production.
