摘要
用固相微萃取蜒气质色谱法测定了玫瑰香葡萄酒中的挥发性香气物质,检出12个醇类化合物、16个酯类化合物、9个萜类化合物及少量醛类化合物,及其赋予的香气特征。
Aroma compounds in Muscat Hamburg red wine were determined by Headspace Solid- phase Microextraction and Gas Chromatography/Mass Spectrometry. 12 alcohols, 16 esters, 9 terpenes, 3 aldehydes were assessed. And the organoleptic properties of these compounds were described.
