摘要
超声波具有多种物理和声化学效应,应用广泛。笔者简要介绍了超声波的作用机理,主要论述了超声波在食品工业中的应用,为进一步做好超声波技术的利用提供参考。
Ultrasound wave has been widely utilized in various industries for its physical and sonocnemistry effects. In this paper, the mechanism of ultrasound wave technology was introduced briefly and some rune tions with its utilization were reviewed mainly in biological and food processing to supply reference for its applications on ultrasound technology in future.
