摘要
通过对各道米糠成分的测定分析,结果表明:一机米糠所含灰分、粗蛋白质、粗脂肪、粗纤维较高;二、三机米糠含还原糖的量较高;各机米糠水分含量的变化不大;大米的精度越高,二、三机米糠所含粗纤维越低,出米率越低,碎米率越高,灰分的含量越低。
