摘要
菊糖是一种天然碳水化合物,它由果糖分子通过β(2→1)键连接,具有水溶性膳食纤维和生物活性前体的生理功能,菊糖可作为糖、脂肪替代物大量用于低热量、低糖、低脂食品中。作为一种新的食品配料,菊糖在食品工业中有着广阔的应用前景。
Inulin is a kind of natural carbohydrate, which is linked by fructose through the bond of β(2→1). With the function of water soluble diet fiber and a biological activity precursor, it can be served as the substitute of sugar and fat and is widely used in low calorie, low sugar and low lipide foodstuff. As a kind of new ingredient, inulin has an extensive prospect in foodstuff industry.
