摘要
对云南食用玫瑰中的蛋白质、氨基酸、矿质元素、脂肪、总糖、维生素C和粗纤维等营养成分进行了分析研究。结果表明,食用玫瑰蛋白质含量为2.36%-3.01%,氨基酸含量为1.22%~1.44%,脂肪为2.54%~2.67%,总糖为3.48%~3.86%,维生素C为88.93-90.21mg/100g,粗纤维为3.18%-3.21%。另外,还含有丰富的矿质元素,钙为0.071%~0.13%,铁为39.3~57.3mg/kg,镁为0.034%-0.043%,钾为0.28%~0.31%,锰为2.79~6.81mg/kg,磷为0.041%~0.051%。营养成分大大高于普通水果,具有较高的保健价值,为进一步开发食用玫瑰提供了科学依据。
Nutritional components such as protein, amino acid, mineral dements, fat, sugar, vitamin C and crude fiber in Yunnan edible roses were analyzed. The results showed that content of protein was 2.36%-3.01%, total amino acid was 1.22%-1.44%, crude fat was 2.54%-2.67%, total sugar was 3.48%-3.86%, vitamin C was 88.93-90.21 mg/100 g, crude fiber was 3.18%-3.21%, and meanwhile edible roses still had abundant mineral elements. The content of Ca was 0.071%-0.13%, content of Fe was 39.3-57.3 mg/ kg, content of Mg was 0.034%-0.043%, content of K was 0.28%-0.31%, content of Mn was 2.79-6.81 mg/kg, content of P was 0.041%-0.051%. Yunnan edible roses contained more abundant nutritional components than general fruits and had high healthcare value. The article provided scientific basis for further development of edible roses.
