摘要 研究了^60Co-γ射线辐照大麦麦苗粉的杀菌效果以及对其主要营养成分的影响.结果表明,辐照处理可有效地杀灭麦苗粉中的菌落总数、霉菌、大肠菌群.随着辐照剂量的增加,麦苗粉中的舍菌量呈同步下降,菌落总数、霉菌和大肠菌群的D10值分别为3.18kGy、4.55kGy和2.32kGy.经11kGy辐照处理的麦苗粉,其主要成分蛋白质、总糖、游离总氨基酸、粗纤维无显著性差异,其维生素E的含量下降约38%,经辐照杀菌后的麦苗粉具有较好的耐贮藏性,可有效地提高保质期,建议的加工剂量为7.5~11kGy. Decontamination of barley seedling powder by ^60Co γ-ray and effect on its nutritional components were studied. Results showed that irradiation was very effective in killing microorganisms in barley seedling powder. The population of microorganisms, such as aerobic bacterial count, moulds and coliform bacteria, decreased with increase of irradiation dose. The D10 values for aerobic bacterial count, moulds and coliform bacteria were 3.18 kGy, 4.55 kGy and 2.32 kGy, respectively. Barley seedling powder, irradiated with 11 kGy, did not have obvious changes in main chemical components, including protein, total polysaccharide, free amino acid, crude fiber, while vitamin E reduced by 38%. It may be concluded that the treatment of irradiation sterilization can increase barley seedling powder qualityguarantee period much longer. The suggested optimal doses are from 7.5 to 11 kGy.
