摘要 就我国专用小麦粉品质标准与重要标项的实际应用以及与国际标准接轨问题进行了论述。认为仅用湿面筋对小麦粉品质进行评判是不全面的,在专用小麦粉标准中引入粉质曲线稳定性,对正确评价专用小麦粉品质具有重要意义。 The problems on the actual application of the quality standard of our specialpurpose wheat flour and its important standard items and the problem on connecting the previous with the rail of international standards are expounded in this paper. The author holds that it isn′t comprehensive to pass judgement on the quality of wheat flour by using the wet crude gluten index. The author introduces the stability of the powder curve into the standards of the special-purpose wheat flour and this will be of considerable significance in judging the quality of the special-purpose wheat flour correctly.
