摘要
甜味剂的作用是增加甜度,但除了感官性,他还具有强化风味及防腐作用。至今功能性甜味剂在国内外的应用很广泛,但甜味剂的成本及食品安全是摆在我们面前的挑战。
Sweeteners added to succades for the sweetness. They also act as important role from altering the mouth feel and viscosity to enhancing flavor and preservation. Now, the application of functional sweeteners is popular over the domestic and international market. It is challenge for us to persuade manufacturers to pay more attention to food safety than low cost, as they decided sweeteners.
