摘要
目的研究优化葡萄皮色素的提取工艺及其抗氧化活性。方法用正交实验优化影响色素提取率的主要因素;用DPPH.自由基清除法研究葡萄皮色素的抗氧化活性及抗氧化能力的相关物质。结果最佳提取工艺为料液比1:5,温度40℃,时间30 min,乙醇浓度50%,超声波提取色价高于微波提取。葡萄皮色素对自由基DPPH.有一定的清除作用。结论确定了葡萄皮色素的最佳提取工艺;葡萄皮色素有较强的抗氧化活性。
Objective To optimize the extraction technology and study the antioxidant activity of grape skin pigments. Methods The optimal technology was obtained by orthogonal test. The antioxidant activity and mutuality matter of grape skin pigments were studied by DPPH* free radical elimination method. Results The optimal technology was as follows: the ratio of material to liquid of 1:5, 40℃ for 30min and ethanol of 50%. The effect of ultrasonic extraction of grape skin pigments was higher than microwave extraction. The grape skin pigments had certain capacity of scavenging DPPH* free radical. Conclusion The optimal extraction technology is obtained, and grape skin pigments have obvious antioxidant activity.
