摘要
VC、绿原酸、没食子酸等物质均具有强烈抑制铁氰化钾氧化鲁米诺产生的化学发光的性质,并且这些物质对发光强度的抑制率(也称清除率)和它们抗氧化活性强弱在一定范围成线性关系。据此,结合流动注射技术建立快速测定物质抗氧化活性的新方法,分析测定了VC、绿原酸、没食子酸三种物质的抗氧化活性,比较了它们的活性强弱,并探讨了作用机理。
Based on the inhibition of chemiluminescence by vitamin c, chlorogenic acid, gallic acid in alkaline aqueous solution, a new chemiluminescence method for the determination of activity of antioxidant with flow injection technique has been established. Vitamin c, chrologenic acid and gallic acid have been determined by the method, and their activity of antioxidant have been compared. The possible reaction mechanism was proposed.
