摘要
[目的]了解辽宁地区盐渍食用菌加工过程中厌氧亚硫酸盐还原梭菌的污染情况,以便进一步研究消除和控制该类细菌污染的方法。[方法]采用平板计数法对9家加工盐渍食用菌工厂的生产用原料级盐渍食用菌、加工用水、食盐、成品进行厌氧亚硫酸盐还原梭菌抽样检测。[结果]9家加工厂所用水样中均未检出该类细菌;4家企业加工用食盐中检出厌氧亚硫酸盐还原梭菌,其菌落数量在3.6~150cfu/g之间;9家加工厂的11个原料样品中有8个原料样品检出厌氧亚硫酸盐还原梭菌,菌含量在9.1~300cfu/g,3个成品盐渍食用菌中检出该类细菌含量在30~100cfu/g。[结论]盐渍食用菌加工过程中,可能会受到厌氧亚硫酸盐还原梭菌的污染,而污染源主要来自加工用原料级盐渍食用菌和食盐。
[Objective] To understand the condition of salted domestic fungus contaminated by anaerobic sulfite-reducing clostridia in processing, and to further study the methods of controlling and eliminating this kind of bacterium. [Methods], plate count method, the anaerobic sulfite-reducing clostridia was detected in raw sahed domestic fungus, water and sah for processing, and finished products in samples from 9 food processing enterprises of salted domestic fungus. [ Results] The anaerobic suite- reducing clostridia were not detected in all the water samples from 9 plants, but salt samples from 4 processing plants were detected positive, and the colony count of anaerobic sulfite-reducing clostridia rauged from 3.6 cfu/g to 150 cfu/g. 8 raw salted domestic fungus samples of 11 samples from 9 plants were detected positive, and the range of colotty count was 9.1-300 cfu/g. Moreover. 3 final salted domestic fungus samples of 9 were detected positive, and the range of colony count was 30-100 cfu/g. [Conclusions] The salted domestic fungus may be contaminated by anaerobic sulfite-reducing clostridia in processing. The insanitary salted domestic fungus as raw material and salt for processing are the main pollution source.
