目前我国市场销售的方便面,只做到了方便食用,而缺乏足够的营养。因此,有必要研究开发营养价值高的新型方便面。 蔬菜含钙、磷、锌、铁、钾等人体必须的矿物质和微量元素。有些蔬菜中还含有陈化酶、瓜胺酸等多种药用成分,可帮助分解食物蛋白质,消除和缓解亚硝酸胺及食品中某些残留的有害成分,清洁和消除体内的菌素性和其它有毒物质。蔬菜系列快餐面的原辅料及工艺流程是:
Instant noodles currently sold in China are convenient but lack nutritional value. Vegetables which consist of protein, fibres and various vitamins and minerals can be mixed with noodles to produce a product which marries convenience with our daily dietary requirements. This report explains the method of producing vegetable instant noodles.
