Forming Mechanism and Preparation of Tea Red Pigment

茶红色素（ＴＲＰ）是一类天然食用色素，其主要组分是多酚类物质氧化聚合物茶红素（ＴＲＳ）与茶黄素（ＴＦＳ）。文中分析了ＴＲＰ的组分、结构及其形成途径，提出了形成途径示意图，并阐明其形成机理和影响因子。同时，用不同方法制备了ＴＲＰ系列产品，并对产品的化学组分。

Tea Red Pigment(TRP)is a natural food pigment mainly consisting of the oxidative products of polyphenols,i.e.TFs,TRs etc.The composition,the structure and the froming pathway of TRP were disccussed,and a comprehensive schematic diagram representing the forming mechanism of TRP was put forword.Serial TRP products were prepared by different methods,and their chemical components,spectrum characteristics,MW distributions were determined and tested.
