摘要 亚麻籽胶主要从亚麻籽种子或脱脂饼粕中提取,是一种新型食用胶,在食品中可用作乳化剂、增稠剂及稳定剂。文章详细介绍了亚麻籽胶的提取、组成与结构、性质及其在食品工业中的应用等方面的国内外研究进展。 Flaxseed gum is a new type of edible gum, which is extracted mainly from flaxseed or defatted meal. Flaxseed gum can be used as emulsion agent, thickening agent, and stabilization agent in food industry. Extraction, production, structure, properties and applications in food industry of flaxseed gum are introduced in this article.
