摘要
餐饮业食品原料采购和贮存是食品加工流程中的首要环节,是食品卫生的关键控制环节之一。本调查于2007年5月.7月对不同类型餐饮单位的食品原料采购人员的食品采购知识进行调查,旨在了解餐饮单位食品采购人员对食品原料卫生知识的掌握情况,确定存在的问题,为进一步加强食品原料卫生管理提供科学依据。
Purchasing and storage of raw food materials is the first step for food processing in catering sector. It is also the critical control point for food hygiene. In this study, we interviewed food purchasers from different type of catering units from May to July in 2007 in China, with the aim to know the level of food hygienic knowledge on raw food materials among the food purchasers in catering sector. Therefore, existing problems were found and scientific information was provided for the raw food materials management.
