摘要
采用国际通用评价方法,研究了不同浓度锗(Ge)对猪肚菇子实体蛋白质营养价值的影响,结果表明:以Ge浓度为40 mg/kg处理的培养料栽培的猪肚菇子实体蛋白质营养价值评价的6项指标中,氨基酸比值系数分、必需氨基酸指数、氨基酸评分、生物价和营养指数分别为:95.49、98.34、99.09、95.46和29.22,均居6种Ge浓度处理之首;而化学评分为77.12,居第5位。综合评价的结果显示,以Ge浓度为40 mg/kg处理的培养料栽培的猪肚菇子实体的蛋白质营养价值最高。
The effects of Ge of different concentrations on the nutritional value of protein in the fruit bodies of Panus giganteus were evaluated. The score of ratio coefficient of amino acid (SRCAA), essential amino acid index ( EAAI), amino acid score ( AAS), biological valence (BV) and nutritional index (NI) of the protein in the fruit bodies of Panus giganteus cultivated in the medium in which higher concentration (40 mg/kg) of Ge treatment was supplemented were the highest among six treatments, being 95.49, 98.34, 99.09, 95.46 and 29. 22 respectively; and its chemical score (CS) was 77. 12, holding the fifth place in six treatments. Panus giganteus cultivated in the medium in which higher concentration (40 mg/kg) of Ge was supplemented bore protein with highest nutritional value.
