酶-化学法从麸皮中提取膳食纤维的工艺研究 被引量:13

摘要 以小麦麸皮为原料,采用酶-化学结合法制备膳食纤维,通过正交实验得出其最佳提取条件:α-淀粉酶质量分数为0.4%,酶解时间40 min,NaOH质量分数3%,碱处理时间50 min,在此条件下麦麸膳食纤维的提取率达55.26%。 The technology for extracting the dietary fiber from wheat bran as a raw material by a combined chemical and enzymatic method was studied. The optimal conditions were obtained by the orthogonal test as follows : α-amylase concentration 0.4%, enzymatic hydrolyzing time 40 min, NaOH concentration 3% and NaOH hydrolyzing time 50 min. Under these conditions, the extracting rate of dietary fiber was up to 55.26%.
