摘要 通过对取自粮库的不同收获年代及当年收获的小麦样品的指标进行变异系数、与馒头评分的简单相关性和对馒头评分的多元线性回归的比较研究,结果表明:小麦储存中面筋指数和面筋吸水量、粉质稳定时间、部分吹泡参数和拉伸参数以及RVA黏度指标不宜作为储存品质的判定指标;吹泡G值和拉伸比值不仅与小麦储存品质有密切的关系,在库存小麦样品和当年收获小麦样品的分布也有较大的差异,有可能应用于小麦储存品质的判定。但是要明确这两个指标在小麦储存品质判定中的应用尚需作进一步的研究。 Wheat harvested in different years taken from grain depot were tested to compare their variation coefficient, simple relativity and multivariate linearity regression of steamed bread score. It showed that some parameters including gluten index and water absorption, Farinoglaph stability, some characteristics of Alveograph, Extensivegraph and RVA viscograph were not suitable to determine the quality of stored wheat. Alveograph G value and Extensivegraph ratio value were closely related to storage quality of wheat, and their distribution in stored wheat and newly wheat were quite different, so they seemed to have a potential possibility to detect the storage quality. Further study is necessary to confirm the utility of the two parameters to evaluate storage quality of wheat.
