摘要
牛栏山酒厂从生产用大曲中分离、纯化得到地衣芽孢杆菌,用液体菌种做种子制成麸曲添加到酒醅中发酵生产二锅头基酒。与普通基酒相比,地衣芽孢杆菌基酒乙酸乙酯含量提高,乳酸乙酯含量降低,酒体协调、自然。地衣芽孢杆菌的应用为提高牛栏山二锅头基酒质量提供了良好的途径。
Bacillus licheniformis strains were isolated and purified from Daqu. Then Bacillus licheniformis liquid bacteria species was used to produce bran starter and the bran starter was added in the fermented grains to produce Erguotou base liquor. Compared with ordinary base liquor, Erguotou base liquor produced by Bacillus licheniformis had higher ethyl acetate content, lower ethyl lactate content, better and more harmonious liquor body. The use of Bacillus licheniformis in Erguotou base liquor production could effectively improve the quality of the produced base liquor.
