摘要 糖醇具有甜度低、能量值低、非致龋齿性、可供糖尿病患者食用等特点,近年来引起人们广泛的关注,文中总结了木糖醇、甘露醇、山梨醇、赤藓糖醇、乳糖醇、麦芽糖醇和异麦芽糖醇的生产方法。工业上生产这些糖醇主要采用的是化学合成法,但近年来出现的生物合成法已越来越引起人们的关注,这种方法条件温和、操作安全、工艺简单、污染小、产物特异性高。 In recent years, the sugar alcohols have attracted great interest for its attributes, such as low sweetness, low- calorie, non -tooth -decaying, and edible to the diabetes. Present review aims to summarize current knowledge on the methods for the production of the common sugar alcohols xylitol, mannitol, sorbitol, erythritol, lactitol, maltitol and isomah. The method of chemical synthesis is widely applied to industrial production of sugar alcohols. Recently, the biosynthesis of sugar alcohols has been gained more and more popularity and been studied for its mild condition requirements, safety, high selectivity, simple techniques and environment friendliness.
