摘要
大豆糖蜜是生产大豆浓缩蛋白过程中的副产物。综述了大豆糖蜜中大豆低聚糖、大豆异黄酮、大豆皂苷和大豆磷脂等功能性成分的理化性质及其生理功能,并简述了大豆糖蜜在食品和饲料工业中的应用。
Soy molasses is the by-product of producing soy prote in concentrate. The pbysicochemical properties and physiological functions of the functional ingredients of soybean oligosaccharides, soybean isoflavones, soybean saponins and soybean phospholipids in soy molasses were described. And lhe applications of soybean molasses in the food and feed industry were briefly described.
