摘要
综述了人工合成甜味剂的功能和稳定性,概括了国内外人工合成甜味剂的检测技术研究进展,并且对甜味剂的发展方向作了展望,研发出天然,安全,营养,高甜味,低热量,口感好,稳定性高新型甜味剂以及开发复配型甜味剂。提出建立能同时检测多种人工合成甜味剂,具有简便,高灵敏度,快捷,高效特点的分析手段是食品中人工合成甜味剂检测技术的一个发展方向。
This paper reviews the functions and stability of artificial sweeteners,domestic and foreign artificial sweeteners detection technique are reviewed and development direction of the sweeteners were prospects,developing a natural,safe,nutritious,high sweet,low calorie,good taste,high stability and new sweeteners and sweetener compound are important.The establishment of multiple simultaneous detection of artificial sweeteners and development of a simple,high sensitivity,fast and efficient means of artificial sweeteners in food detection are supposed as an important developing direction.
