中心组合设计优化玉米醇溶蛋白的提取工艺 被引量:5

摘要 玉米醇溶蛋白(zein)具有良好的成膜特性,应用在食品、化工、医药和生物降解包装材料方面有着诱人的前景。本研究以玉米蛋白粉为原料,利用超声波、微波协同预处理手段提取玉米黄色素和醇溶蛋白,通过单因素试验及二次回归旋转组合试验研究了乙醇溶度、提取时间、提取温度等因素对玉米醇溶蛋白提取率的影响,确定了超声波微波辅助提取玉米醇溶蛋白的最佳工艺条件,建立了回归数学模型。结果表明:乙醇浓度为75%,时间35min,浸提温度52℃。在该条件下玉米醇溶蛋白的提取率可以达到56.8%,是一条经济可行的工艺路线。 Corn zein can form tough,hydrophobic,grease-proof coating.Applications of zein in special food,pharmaceutical and biodegradable plastics have a potential prospect.In the present study,microwave and ultrasonic method was applied to as pretreatments to extract zein from corn gluten mea1.The single factor experiments and quadratic orthogonal rotation regression combination design were adopted to study the effects of ethanol ratio,time,temperature on the zein extraction.The optimum process conditions of extraction were determined.Then extraction regression model were established:75% ethanol,extraction time 35min,extraction temperature 52℃.The yield of zein by this new process was 56.8%.The extracting method is economical feasible.
