摘要
结合机械制曲的发展现状和工作经验,对茅台酒的自动化制曲提出了可行性建议。①特制金属架,采用架子堆曲发酵。②将制曲厂房2层布局改成7层布局,大大节省了制曲占地面积。③利用自动控制技术,适时调整湿度、温度,自动控制发酵,达到最佳的发酵效果。
Based on the present development status and the working experience of mechanized starter-making for Maotai Liquor,some practical advice were put forward as follows: 1.purpose-made metal shelf and stacking fermentation on the shelf;2.two-layer layout of starter-making workshop changed into seven-layer layout which could greatly save the floor space for starter-making;3.the use of automated control techniques to realize timely regulation on humidity and temperature and automated control of fermentation,which could achieve the best fermentation effects.
