对白酒中的乙醇和各类香味物质(酯、酸、醇、醛和酮)作了扼要简述,并分别对各种具有代表性的有机物的基本性质及其在白酒中的主要作用作了概述。(晓文)
Ethanol and various types of flavoring substances in liquor such as esters, acids, alcohols, aldehydes, and ketone were introduced in this paper briefly.
