摘要
[目的]探讨林蛙皮活性肽的抗氧化活性。[方法]林蛙皮经木瓜蛋白酶水解后,将产物经葡聚糖凝胶G-25层析纯化,测定活性组分对DPPH.、.OH、O2-.的清除能力。[结果]柱层析共分离出4个组分(PⅠ、PⅡ、PⅢ、PⅣ),各组分抗氧化能力的大小顺序依次为PⅡ>PⅢ>PⅠ>PⅣ。PⅡ组分对各自由基清除能力的大小顺序依次为DPPH.>.OH>O2-.。蛋白浓度为1 mg/ml时,对DPPH.的清除率为94.23%;蛋白浓度为16 mg/ml时,对.OH的清除率为86.79%,对O2-.的清除率仅为26.32%。[结论]该研究为林蛙的综合开发和利用提供了新的依据。
[Objective] The aim was to study the antioxidant activity ofactive peptide from skin of forest frog. [ Method] The papain hydrolysate of skin of forest frog was purified by Sephadex G-25 gel filtration, and the scavenging activity of DPPH.·OH OH and O2^· of active components was determined. [ Result] The results showed that there were 4 components were obtained,the antioxidant activities were in the order:PⅡ 〉PⅢ 〉 PⅠ 〉 PⅣ. The order of radical scavenging activity of fraction PⅡ was DPPH. 〉 ·OH〉 O2^·. The scavenging rate of DPPH. was 94.23% when the con- ceutration of the protein was 1 mg/ml, and the scavenging rate of ·OH and O2^· were 86.79% and 26. 32% respectively when the concentration of the protein was 16 mg/ml.[Conclusion] The study provides a new basis for the comprehensive develooment and utilization of forest fro,,.
