Carcinogenesis of acrylamide:a review of recent studies

摘要 丙烯酰胺是一种常见的工业毒物,可经皮肤、消化道、呼吸道等多种途径进入人体,其神经毒性已被广泛认同。近年来国内外学者对其致癌性进行了大量研究,致癌证据和可能致癌机制方面有了新的进展。该文检索了丙烯酰胺致癌性相关文献,并从流行病学和毒理学方面探讨其致癌性及可能的致癌机制。 Acrylamide is widely used in chemical industry as an industrial toxicant, which could enter the body through skin, alimentary tract and airway. Its neurotoxieity had already been substantiated but scarce attention had been pain to its carcinogenicity before acrylamide was found in fried food . After that mounts of studies were conducted around the world and new evidence about its carcinogenicity was found. Studies about acrylamide carcinogenesis were retrieved in many databases, and then the carcinogenesis of acrylamide was discussed from the point of epidemiology and toxicology.
